Popbar Presents…The Waffle Pop!

Last summer, I wrote about Popbar in my top 5 ice cream shops in NYC.  Popbar was the most unique of the 5 shops offering naturally flavored gelato pops. I recently got the chance to meet with one of the founders of Popbar, Daniel Yaghoubi.  We met early one morning, maybe earlier than what he’s used to, and we spoke about the concept and the hard work behind Popbar.

The first store opened here in NYC 4 years ago. When I got Daniel talking about his journey and his hard work towards Popbar, he finally seemed really awake. “Everything has been developed from the ground up. From the flavors to the molding of the actual Popbar.” Daniel says they even thought about the science behind each bite, to make sure that when you bite into it, it tastes just right.

Daniel mentioned that the hardest part of it all was creating the flavors of the gelatos. There are a grand total of 30 flavors in heavy rotation. Pistachio and Strawberry Sorbet are the only two flavors that are always available daily. Each flavor was chosen based on tradition and customer satisfaction. Daniel made sure I tried his favorite flavor: the Banana dipped in milk chocolate – it was delish!

This Spring, Popbar is introducing their latest treat: the Waffle Pop. It’s your favorite breakfast treat, on a stick! The waffle pop is filled with three natural flavors of your choice and can be topped with a variety of choices just like the gelato pops. It goes wonderfully with the hot chocolate on a stick or the frozen hot chocolate. The Waffle Pop was the perfect early morning treat.

With dreams of becoming a globally recognizable brand, Popbar will continue to bring us innovative desserts and treats to keep us on our toes. Daniel also says that he “doesn’t want it to feel franchised. We don’t want to lose focus on the taste”.  Kudos to that!  He promised that there is more great stuff to come, but he is not ready to give us more info just yet! Whatever the surprises are, I do hope they’re all on a stick!

  • That waffle pop is interesting. I don’t quite understand it, but I want to try it. Is the waffle frozen, too? Popbar sound EXACTLY like a place I would enjoy and go to repeatedly if I lived anywhere nearby. Our ice cream maker recently broke, so I am on a popsicle making kick as the store bought ice cream in Malaysia is either super expensive or completely gross.

      Yep, the waffle gives it a bit of the chewier texture in with the pop! Oh, love the idea of making your own pops, yum!

    I can’t choose one. I usually ask for a mix and often that involves coconut and dark chocolate – sometimes pistachio and other times… *grin*
